Your favorite pie crust filled with 5 lbs of a mix of sweet and tart apples. Core, peel and slice the apples then add white sugar, brown sugar and cinnamon. Cook them on the stove for about 15 min. Strain apples - keeping 1/4c of the juice - and fill the crust with the apples. Add a splash of lemon juice to the apple juice, mix, and drizzle over apples. Cover with top crust. Brush with an egg wash and bake!
