You only need three-ish ingredients for this raw, vegan veggie spread. And some clothes or an apron you don't care about. Because on a scale of water to turmeric, these beets can stain.
First: get a medium red beet (or really the same amount of carrot, broccoli, cauliflower, or hell, butternut squash would work, too). Peel and remove any roots or nubby parts. Cut into cubes and place into a food processor. Pulse until your vegetable of choice is finely chopped.
Then add a palmful or two of pine nuts, cashews, or any creamy nut. And one small carton of plain coconut yogurt (about 1/4 to 1/2 cup). Continue pulsing until you get a smooth spread-like consistency. If you want less sweetness and more tart taste, use Greek yogurt instead.
Add spices (ginger!), fresh herbs (dill!), and salt (sea!) to taste.
