New-level fried egg a la Pok Pok: Heat a dry pan on the highest heat. Add 1/4 inch oil, add egg, lower to medium-high, cover and await splatter everywhere. Once it's golden (a nerve racking 45 seconds), flip, and it's done in another minute. Cut into pieces for a salad; the yolk shouldn't be runny.
