Fancy not fancy dinner! Sauté diced onion in butter. Add sliced mushrooms, let brown. Season with salt, pepper, and rosemary. Cook until golden and crispy. Add a splash of white wine near the end. Spread ricotta or Greek yogurt on a slice of toasted bread. Top with mushrooms and some grated Parmesan.
