Ok... So on top of the hash is a piece of leftover meatloaf from last night (and yes, that is ketchup- don't judge- it's meatloaf for Pete's sake). The hash is the star of tonight's supper. I chopped the other half of the red onion from the chilaquiles this morning and sautéed it with one strip of bacon, also chopped. After the bacon was crispy, I added 2 cloves of minced garlic, a chopped up leftover baked potato, and about 2 big handfuls of shredded Brussels sprouts (they were seriously past their prime- but I hate to throw anything away). Lastly, I added some thinly sliced mushrooms. I gave it a good sized pinch of salt and let it hang out and caramelize. At the end I added a good dose of balsamic. There was just enough left over to throw a fried egg on in the morning... #notarecipe #hashfordinner #cleanoutthepantry
