Roast cauliflower and red onion with Za'atar and sumac. In a large salad bowl add arugula, quinoa, chickpeas, currants & roasted red pepper. Add cauliflower and onion. Dress with olive oil, lemon, salt & pepper. Top with a tahini dressing (see @thefullhelping for tahini sauce recipes!)
