For the soup, a pound of ground beef, break them up into large chunks, put them in a large pot, add 8 cups of low sodium beef broth, 2 cups of water, 6 quarters of onion, 2-inch chunk of ginger sliced, a stick of cinnamon, 6 cloves, 6 pods of star anise, a teaspoon of blackpepper corn, 2 teaspoons of salt, 1 tablespoon of sugar, 1/4 cup fish sauce, bring the liquid to a boil and simmer on medium low heat for 30 min. Strain the broth with a couple of layers of cheesecloth. For the meat, I sliced up a strip steak. For the rice noodle, soak it in hot water for 15 minutes until pliable, then put in boiling water for a couple of minutes until cooked, drain. Finally, to assemble, put the beef on the noodle, ladle boiling beef broth on top, garnish with sliced onion, scallion, basil, cilantro, bean sprouts, wedges of lime, and dabs of sriracha. That's it, an easy, delicious meal in 45 minutes or less.
