Sauté 2 stalks chopped broccoli (peel & chop the stems, too) in a nice hunk of butter - about 1 1/2 TBLS in a deep oven proof skillet or casserole. Add about a cup of chopped boiled potatoes & a couple of chopped scallions. Get out 6 eggs. Separate 4 of them. Mix the yolks & two whole eggs with about 2/3 cup cheese sauce leftover from the last time you made mac&cheese and 2-3 TBLS grated Parmesan. Beat the egg whites until they hold soft peaks. Fold into the yolks and then pour over the sauté. Cook on the stove about 5 minutes and then finish in 375 degree oven - until firm & top is browned.
