Shells make the best Mac and cheese. Take it off the heat and drain most of the way leaving 1/3ish cup of water and return to low heat with a of of butter. Cheddar and a bit of Good white American cheese, milk, a touch of pasta water, and a 1/4 cup of roux cooked til just golden. A spoon of mustard to finish and it's a perfect stovetop Mac.
