Jamaican Jerk Tempeh

MARINADE
2 tbs of extra virgin olive oil
1/3 cup soy sauce
1/2 tsp of lime juice
4 cloves garlic, minced
3 sprigs of thyme
1 tbs ginger, minced
2 tbs honey, raw
2 tbs maple syrup
1 tbs all spice
1 tsp cumin
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp cayenne pepper
1/4 tsp salt

TEMPEH AND OTHER INGREDIENTS

8oz package of tempeh
1/2 yellow onion, chopped
Kale, chopped, remove stems
1 cup brown rice
1/2 avocado

1. Mix marinade. Add tempeh and onion. Cover, refrigerate 3 hours.

2. Cook rice, usually 45 mins

3. When ready to cook add olive oil, heat medium high heat and add tempeh and all remaining marinade. Cook 5-7 mins or until majority of liquid gone. Add kale and cook additional 4 mins. Remember to stir.

4. Serve tempeh over rice. Garnish with cubed or sliced avocado. Season with droplets of sriracha sauce.
