I chop up an onion and soften in the pan with some olive oil and a pinch of salt. Add a tin of chopped tomatoes, 1tsp of cumin, dash of cayenne, pepper and a splash of fish sauce (trust me!). Get that bubbling away. Simmer for a few minutes and then make a little 2 holes and crack in eggs in. Simmer until the whites are cooked through. Top with crumbled feta and fresh parsley. Serve out of the pan!
