Caponata- sauté cubes of eggplant (2 medium sized) until soft, then remove from pan. Add EVOO, then add diced (1) red onion and (3x) cloves of garlic- once softened add thinly sliced celery (2 stalks). Finally add (3) chopped tomatoes, basil, (2 tbsp) vinegar and (1 tbsp) sugar, and simmer for about ten minutes. Season with salt and pepper, and serve either hot, room temperature or cold. Perfect atop toast, polenta, pasta or as a side to an Italian feast! (All ingredients approximated)
