Simple Vegetarian Noodle Bowl

Cook off brown rice noodles and run under cold water to chill. Add serving to bowl.
Slice extra firm tofu into large portions and sear in oil at medium high heat until slightly crispy. Add a generous helping of soy sauce and allow to reduce. Remove from heat, allow to cool slowly and cut into bite sized portions. Add to bowl.
Dice veggies and add to bowl.
