This is a great meal idea, especially if you're tired and don't have a lot of time. This is also a great option if you have any vegetables you're worried may go bad. Grab any vegetables you have, I used sweet potato, beets, carrots, Brussels sprouts, broccolini, and asparagus. Preheat oven to 425 degrees F. Drizzle the vegetables in a high heat safe oil like grapeseed oil. Toss in your favorite spices. You can keep it as simple as sea salt and pepper. I also added some onion powder and garlic powder.
