I made this breakfast tourte today inspired by Basquelandia. A simple butter pastry with 2/3 all purpose flour, 1/3 fine corn flour, butter, and piment d'Espelette then filled with sautéed leeks, leftover artichoke hearts and a generous dusting of cheese. Pop in the hot oven- 200'C/420'F for 25 minutes. Done!
