Pop Has Freed US: mandolins a potato. Rinse in three changes of water (water must run clear). Dry potatoes and place on a silpat. Cook in 400 oven until light brown. Let cool. Toss with evoo, smoked paprika and kosher salt. Sautee in evoo until crispy. Drain on paper towels and add more salt and smoked paprika. Top with lime-paprika crema (mix Greek yogurt with lime juice and smoked paprika) and chopped cilantro.
