Mushroom Bolognese-Lots of chopped garlic, onions, sprinkle of red pepper flakes-sautée in olive oil. Add lots of chopped mushrooms-any kind-sauté. Add chopped canned tomatoes, chopped fresh basil, thyme, oregano
and red wine. Cook at least an hour, more if you have time. Serve over pasta with freshly grated pecorino. As yummy and deliciously rich as beef!!
