Almost every time I make a custard the eggs curdle, at least a little bit. Can't remember where I learned the tip to blitz it all up on a blender when that happens -- maybe it was David Leibovitz -- but it's been a lifesaver time and again, including today with this lemon curd (Alice Waters' not-too-sweet recipe)
