Great use of leftover chicken. Soak glass noodles in hot water for 15 minutes. Meanwhile, mix pieces of poached chicken, radish and carrot slivers, chopped mint and cucumber together. Mix fish sauce, rice vinegar, lime juice and agave to taste. Drain noodles. Mix chicken and veg with noodles. Drizzle sauce on top with chopped peanuts.
