Experimented with sunchokes (Jerusalem artichokes) and oyster mushrooms tonight for a hash. Lots of steps (more than I'd like), but delicious if you have the time. Boil sunchokes for 10 mins or until tender. Drain and brown in coconut oil, about 3 mins per side. Boil Swiss chard or Tuscan kale for 3 minutes or until tender. Drain, let cool, ring out water and chop. Sautee sliced red onions (1/4 inch thick) in olive oil until browned, about 10 mins. Mix everything together and heat through. I also added some left over quinoa. Farro or another grain would work too. #sides #healthy #healthyeats
