Albondigas - a traditional Mexican soup.
Mix in a large bowl: rice, chopped onion, bread crumbs, minced fresh cilantro, ground cumin, salt, dried oregano, ground pork, ground beef, and 3 egg whites. Mix and shape into meatballs.
In a hot pan, brown all sides of meatballs. In a different large pot add 3 slices of onion, chopped carrot, and minced garlic and sauté until vegetables are tender. Add chopped tomato to pan, stirring to combine. Stir in chicken broth and bring mixture to a boil. For additional flavor, add ground cumin and/or garlic powder. Add meatballs and mint leafs to pan. Reduce heat, and simmer 35 minutes. Add zucchini, salt, and black pepper to pan. Cook 10 minutes. Garnish with cilantro.
