So many good things begin with a batch of sushi rice! That's on the bottom. I roasted some mushrooms, broccoli, and asparagus and stacked that on the rice. I garnished it with sesame seeds, scallions and some chili garlic aoili. Back to that in a minute.
Let's talk about the fish stick! My husband does not like fish. Well, maybe tuna- but that's it. I, on the other hand, love fish- pretty much any kind. I was really craving fish tonight, but needed a way to cook it and disguise its "fishiness." Being a good Southern girl, my chosen technique was frying. I used a halibut fillet and cut it into 2 equal pieces. I used a simple egg wash, seasoned flour double dredge and fried the pieces in peanut oil. After frying, I perched them atop the veggies and rice.
The chili garlic aoili was simply some mayo, sesame oil, sriracha, rice wine and a touch if of honey.
