Middle eastern baked rice and chicken. Mix brown rice, pistachios, asparagus, sliced shallots, minced garlic, cumin, turmeric and a little cardamom, salt and pepper and chicken broth. Season chicken thighs w/ salt & pepper, place on top, cover and bake in 375 F oven for an hour, then uncover and bake for another 45 min. (Top with parsley, cilantro, green onion - I was too hungry and forgot!) yum!
