Who needs carbs? Boneless beef short ribs seasoned with salt/pepper and seared. In a Dutch oven soften the onions then add minced garlic, spices (brown sugar, chili powder, dried chipotle peppers, cumin, oregano and espresso powder). Add canned diced tomatoes and beer. After mixture comes to a boil add the short ribs back in and roast in the oven at 300F for 2 hours. Swirl in some bittersweet chocolate at the end and it's so good I don't even need carbs :)
