Vanilla cinnamon chia seed pudding for breakfast is my latest obsession. Topped with fresh fruit (pictured: plums, strawberries, persimmons)

I used almond milk but you can use any type of vegan milk or regular milk and let it sit overnight with the chia seeds (2 cups milk to half cup chia) and it makes a few days worth. In the morning I top it with some honey or maple syrup.
