Brisket and butternut squash enchiladas with Hot Bread Kitchen heritage corn tortillas (good, thick corn tortillas from nixtamal make a huge difference!). Enchilada sauce = sautéed onion and garlic, 1 can organic tomato sauce + 3 chipotles in adobo; blend with immersion blender. Fry tortillas until lightly browned. Coat bottom of baking dish with sauce, dunk tortillas in sauce, fill with any cooked meat and/or veg, roll and place in dish seam-side down. Top with shredded cheese and bake at 425 until cheese is browned (15-20 min). Top with whatever you'd like- we did red onion, sliced avocado, sour cream and cilantro! #dinner #nocontest #notrecipe
