On a skillet, sauté a red onion until translucent, then add canned lentils. Meanwhile, slice Roma tomatoes (or other non-juicy variety), salt and pepper generously. Rip some mozzarella cheese and top tomatoes. Top cheese and tomatoes with lentils and onions. Drizzle olive oil and sprinkle olive oil, serve with more salt and pepper if desired.
