Is there ever a bad time to make a sweet potato galette? If you want to make this into Nora Ephron's deluxe version chop up a handful of prunes and sprinkle them in between the layers. Otherwise, grease a nonstick 10" sauté pan(with lots of unsalted butter) and start layering in the potatoes, "about" 4 medium, evenly shaped, and peeled. When you are done place the pan over medium heat and let the sweet potatoes on the bottom brown deeply. This takes time to do it properly so be patient—low, slow, even heat. While you are browning the potatoes turn on the oven to 350 F. One the galette is brown, put a lit on it and slide it into the oven and bake it for 20 minutes. Remove the lid and bake another 5 minutes, invert the pan onto a platter, remove the pan, and serve.
