Kiddo-made dumplings:
• Whisk 2 cups AP flour with 2 pinches salt
• Mix 3/4 cup boiling water into dry ingredients; knead until smooth ball (all done in stand mixer); rest 30 minutes covered in plastic
• Make filling--any combination of ground meat and/or tofu with grated or minced garlic, ginger, carrot, cabbage, etc. with a splash of tamari mixed well
• Take balls of dough (recipe for 30) and roll into thinnest flat circles with rolling pin, keeping extra dough covered to keep from drying out
• Add about a tablespoon of filling and fold up the dumplings
• Cook dumplings in soup or water, or add to hot oiled skillet and once browned add 1/2 cup water and cover to steam through for a few minutes
