Chinese chicken. Poach chicken in water. In a hot pan add sunflower oil until hot and add in thinly sliced ginger and smashed garlic cloves. Cook for one minute and then add two sliced scallions and a chopped dried chili. Add in the poached chicken along with rice wine, soy, sugar, cover and cook for 20 minutes until the liquid is gone. Shake around to coat and serve over rice #notcontest
