My plant based take on fish tacos. I marinated portobello mushrooms in a loosely followed recipe for fish taco marinade (lemon juice, garlic, salt, chili powder, cumin, smoked paprika, touch of oil). Then seared them in small batches in the cast iron skillet. Turned out just perfect ?
I also massaged the purple cabbage in a little sweet lime juice to soften for a few hours before dinner.
Pretty basic boiled black beans with a little extra smoked paprika.
And the gem at the bottom - I made sourdough tortillas (2/3 whole wheat, 1/3 all purpose flour)!
