One pot pasta!! Add pasta and water (enough to cover the pasta). Add tomato paste and let cool for a bit. Add veggies (I like rainbow chard, kale, any collard green really). You can pretty much add anything, garlic, tomatoes, zucchini, peas, pasta sauce, basil, etc. I've used frozen and fresh veggies and all work well. Towards the end, once the water has been absorbed, I like to add a vegan protein (personal favorite is Field Roast, which Whole Foods has). Eat!
