Fluffy fail proof omelets every time! The secret ingredient?...Cottage cheese! Milk adds fluff but also makes it thinner so in turn makes it fragile and difficult to flip... But cottage cheese (sour cream and plain Greek yogurt also work pretty well) adds the fluff without watering your omelet down, making it so much easer to flip and fold! And the best part yet!, because the cottage cheese makes it the egg mixture so much thicker you can even add ingredients into the mixture! My go to omelet consists of 1 or 2 eggs ( it depends on how hungry I am), 1 tablespoon(ish) of cottage cheese, diced ham (I love ham so the more the merrier for me) 1 handful of spinach, 1/2 of a Roma tomato, and of corse salt and pepper to taste! I mix all of these ingredient straight into the whisked egg mixture, pour mixture into greased pan and cook on medium heat. Add your favorite cheese and or whatever other filling you desire (because this omelet can handle all the extras!) on one side of the omelet. Fold in half and enjoy you omelet that is sure to be the envy of all other omelets!
