Chop and sauté several pieces of bacon, drain most grease, set aside. In new pan, caramelize diced shallots or red onion, when halfway done, add mushrooms- choose hearty, flavorful mushrooms that will stand up to bacon and vinegar. Pour mushroom shallot mixture over bacon, reheat. Once warm, stir in a spoonful of mustard and several spoonfuls of sherry vinegar (don't skimp on the vinegar, use the good stuff). Toss with bitter greens like dandelion or frisée. Top with a poached egg, enjoy!
