Contributing Editor Lindsay-Jean Hard learned from a Food52 user to stop tossing pineapple scraps and turn them into tea. Cover pineapple peels and core (crown not necessary) with water and add a knob of ginger and a cinnamon stick. Simmer for 25 minutes, then turn off the heat, and let it sit, covered, for another 25. Strain and enjoy it hot or cold!
