Red lentil lunch- sautée 1 onion in evoo, add grated 2 inch piece of ginger, 1 cinnamon stick, I chopped garlic clove, 1 tsp. Cumin, dash of cayenne. Add 1cup red lentils and stir until coated in oil and spices. Add 3 cups veggie broth- add 14oz can chopped tomatoes, handful of spinach. Bring mixture to a boil, turn down and simmer for 15 minutes. Serve with fresh lime juice, plain yogurt, cilantro.
