Sounds amazing. Where do you source (or how do you like to make) chestnut purée?

I get mine in Switzerland -I've got this terrible habit of logging food all over the world... a French deli should have some as well. But if you can get fresh chestnuts, boil them until tender, peel and purée in the blender with sugar, add whipped cream. Some people add kirsch as well
