Kale a la vodka. Started out as a pasta sauce but I think it'd be great on its own or as a side dish. Sauté diced onion in olive oil until soft. Add chopped kale, then a bit of cream and/or whole milk. When kale is soft, add crushed tomatoes and a bit of vodka. Cook on low heat until it comes together and thickens a bit. Serve w/grated Parmesan or pecorino, over pasta or not.
