Preheat oven to 400. In a small bowl, combine 1/3 cup soy sauce, 2 tablespoons ground ginger, 2 tablespoons apple cider vinegar, 2 tablespoons sugar, and 1 tablespoon black sesame seeds. Stir until sugar dissolves. Scatter carrots, Japanese sweet potatoes, radish, spring onion, and asparagus on a sheet pan. Drizzle with olive oil. Place two wild caught salmon fillets on top of vegetables. Pour soy sauce mixture over the salmon. Roast for 10-12 minutes. Remove salmon to rest. Give the vegetables a stir in the pan sauce. Roast for another 10 minutes until the veggies are tender. Serve over butter crunch lettuce. #notcontest
