#Shakshuka (eggs in purgatory) !!
Sauté 1 small onion and 1 red bell pepper in 1 tbsp evoo (10 minutes)
Throw in 3 cloves minced garlic and 2 tbsp zatar and a few dashes of red chili flakes, add 1- 14 oz can chopped tomatoes and 1- 14 oz can chopped 'fire roasted' tomatoes
Let simmer for 5 minutes make wells in sauce and crack eggs into them - sprinkle ontop chopped parsley, cover for 5 minutes.
Serve immediately with your favorite bread!!
