Lamb and Cucumber Salad Pita's. Season 1lb of lamb mince with 2 cloves crushed garlic, 1tsp za'atar, 1tsp sumac, salt + pepper. Roll into balls and cook in a cast-iron skillet for 5-10 minutes until caramelized and cooked through. Mix some plain yogurt with 1tsp lemon zest, 1 clove finely minced garlic, 1tsp chopped mint. Slice cucumber, jalapeno, spring onion, red onion, and any other veggies of your choice. Warm a pita, add lamb + veggies and sauce. Enjoy!
