Halve 1 bag of Brussels sprouts
Cut 1 sweet potato into bite size pieces (I found these beautiful purple ones)
Mix with 1.5 TBS grape seed oil
Roast for 40 minutes or until potatoes are tender and Brussels are browned at 375 degrees.
Add prepared chopped bacon and Parmesan Reggiano all over veggies and roast for 5 mins more. Enjoy hot or cold.
