Poke holes into the chicken breast with a fork, lay slices of ginger on top and sprinkle with a good amount of rice wine. Let rest for about 10 min, then cover with Saran Wrap. Microwave for about 2 min on each side until done. Let cool, then slice the meat. While you wait, combine a ratio of 1 parts sesame oil to 2 parts soy sauce (or fish sauce). Garnish with scallions or grated ginger and serve with the sauce
