1 part grains and seeds (I use 1/2 cup of rolled oats, 1/4 cup steel cut oats, and 1/4 cup assorted grains/seeds, like chia, flax, amaranth, wheat, millet, barley, spelt, grits, whatever)
2 parts milk (I use 2 cups)
2 parts water (I use 2 cups)
Pinch of salt
In a medium-sized pot, heat the milk, water and salt to almost boiling. Pour in the oatmeal mixture and stir well with a wooden spoon. Reduce heat to simmer and cook, stirring pretty consistently, but it's ok if you have to brush your teeth or go to to the bathroom real quick or whatever. Stir until desired consistency is reached. Takes about 15 - 20 minutes. Remove from heat.
I like my porridge on the mushy/soupy side. It will firm up as it sits. Store leftovers in the fridge, and reheat single portions in the microwave with a splash of milk.
To serve, top your porridge with whatever you like. Brown sugar, maple syrup, blueberries, lavender buds, toasted pecans, cacao nibs, cream. Seriously, whatever you like is ok.
