Kale, Egg and Cheese Toast - sautée garlic, scallions and kale in a pan (or whatever you have lying around- artichokes are great here!). When the greens are wilted toss in an egg and scramble, stopping short of fully cooked. Put the soft egg mixture on a sturdy slice of bread, cover with cheese (again whatever you've got but Asiago melts so well) and heat under the broiler for a few min until melted.
