Parsnip alla vodka

Using a regular old vegetable peeler, peel 3 or 4 parsnips into ribbons and set aside. Heat up your favorite vodka sauce in a pot (homemade or store bought- I have a vegan recipe on my website if you're interested 'vibrantandpure.com') toss the parsnip ribbons in with the sauce and add a drizzle of olive oil, some chopped parsley, and salt and pepper to taste. Let the parsnip noodles cook in the sauce on a simmer for about 10 minutes or until parsnips are softened but not mushy. #notcontest #notrecipe #pasta #paleo #dinner
