Season chicken cavity with salt and pepper. Squeeze 2 lemons, some olive oil and mix with chopped garlic, salt and pepper. Add mixture to large zip lock big enough for whole chicken. Add chicken and seal, removing as much air as possible. Shake and massage chicken and marinate for 20 mins or longer(the better). Remove, add lemons and more garlic cloves to cavity and and place in cast iron skillet and bake at 425 until internal temp is 165F.
