Have you ever seen Chef Alain Passard cook asparagus this way? Simply trim the bottoms, peel them, and then tie them into a bundle with twine. Place a healthy amount of clarified butter into the pan and stand the asparagus. Keep the pan over low heat and as the butter heats bast the asparagus. Baste them for a good 1/2 hour. Untie and season with salt and pepper. The result is asparagus with crunchy caramelized bottoms, tender middles, and delicate tips. #spring #vegetables #vegetarian #sidedishes #norecipe
