carrot ginger dressing! to a blender, add a splash of water, a few chopped up carrots, a knob of peeled ginger, 1/2 shallot, a few glugs of olive oil and rice wine vinger, a scoop of miso and blend. salt to taste. serve with sliced avocado!

My boyfriend and I made this and it was zesty and delicious! The only problem we had though was that it kept separating into pulp and liquid. Any tips?

Maybe blend a little longer? Whenever I make this dressing I let the food processor go for at least 3 full minutes and haven't had a problem with it separating.
