Spiralized Yukon Gold potatoes baked with rosemary butter and Mexican cheese blend, finished with sautéed scallions and baby peppers. The egg was added later in a Shakshuka kind of way, not quite poaching but still nestled in the veggies, covered and cooked to perfection.
